Fancy Grilled Cheese & Tomato Soup


 

Ingredients

Tomato Soup:

3 T Olive Oil

1 Medium Onion chopped

1 tsp Sea Salt

½ tsp Black Pepper

1 T Dried Oregano

½ tsp Dried Basil

3 Cloves Garlic minced

3 15oz Cans Diced Tomatoes

4 C Chicken Broth

½ C Heavy Cream

Grilled Cheese (serves 2):

4 Slices Sourdough Bread

2 T Butter softened

1 tsp Dijon Mustard

2-4 Slices Cheddar Cheese (depending on how big your bread is)

2 Slices Prosciutto

1/4 Red Onion thinly sliced

1 Small Granny Smith Apple thinly sliced

2 Sprigs Fresh Thyme (leaves only)

1 T Raw Honey

½ C Arugula or Spinach


Directions

Heat a large soup pot over medium heat. Add the olive oil and chopped onion.

Season with salt, pepper, dried oregano and dried basil. Sauté until onions are golden brown. 5-8 minutes.

Add garlic and sauté for one minute more. Add the tomatoes with juices and chicken broth.

Turn up the heat to high and bring mixture to a boil. Once it boils, turn the heat down to a low simmer and cook for at least 10 minutes.

While the soup is simmering, begin to make the grilled cheese. Start by spreading the butter on one side of all 4 slices of bread. Spread the dijon mustard on the other side of each slice.

With the buttered sides facing down, dijon side up, layer the cheese, prosciutto, red onion, green apple, thyme leaves, drizzle of honey and arugula onto two pieces of bread. Top the stacks with the dijon side facing inward to complete the sandwich.

Place the sandwiches on a heated grilled or fry pan and cook over medium heat until golden brown. 3-5 minutes.

Flip each sandwich over and cook the other side until golden brown. another 3-5 minutes.

While the sandwiches are cooking, turn the heat off on the soup and use an immersion blender to puree until desired consistency. (If you don’t have an immersion blender, transfer the soup to a blender in batches and blend to desired consistency. Don’t overfill your blender!)

Once all the soup is blended, add the heavy cream and mix through.

Plate and cut sandwiches into desired shapes (squares, triangles, sticks…the possibilities are endless!)

Top your soup with a little shredded cheddar cheese and a dollop of plain Greek yogurt for an extra burst of flavor! Enjoy!
