Chicken Wings

Two WAys


 

Ingredients

2 pounds chicken wings

1 tsp onion powder

1 tsp garlic powder

1 tsp smoked paprika

1 tsp salt

¼ cup all-purpose flour

Pinch black pepper

1 whole head garlic peeled and separated into cloves

4 tbsp olive oil divided

6 tbsp butter divided

2 tbsp raw honey separated

¼ cup bbq sauce

¼ cup parmesan cheese grated


Directions

Preheat oven to 450°. Line two baking pans with parchment paper and use cooking spray to grease generously.

In a large bowl, combine onion powder, garlic powder, paprika, flour, salt, and pepper. Add thoroughly dried chicken wings and toss in seasonings, making sure every wing is incorporated. Arrange wings on prepared baking pans, shaking off any excess flour and making sure they do not touch. I find I typically fill two trays. Spray with cooking spray, making sure each wing gets lightly covered.

Sprinkle the cloves of garlic around the wings. Bake in oven for 20 minutes.

Remove the garlic cloves from the pans. Flip each wing and return pan to oven. Bake for an additional 20 minutes.

Now let’s make the sauces. In two glass bowls, separate the butter evenly. Melt butter and add half the garlic to each bowl. In one bowl of garlic and butter, add 1 tbsp honey and the bbq sauce. Mix thoroughly, mashing garlic into the mixture. In the other bowl, add the parmesan cheese and remaining tablespoon of honey and mix, again mashing the garlic.

Remove the wings from the oven. In large bowl, add half the wings and the parmesan mixture. Toss carefully and place wings back onto baking pan. Set aside.

In a large bowl (I use the same bowl for both – making sure to mix the parmesan wings first), add the remaining wings and the bbq mixture. Toss carefully and place wings back onto second baking pan.

Place each tray under the broiler for just a minute or two. We want crispy, not burnt.

Remove from broiler and enjoy with your favorite dipping sauce or without. They’re so flavorful you may not need one.
