TRL Ramen Remix
Ingredients
2 Packages Ramen Noodles (not the little orange packages – look in the Asian food section)
2 Boxes Chicken Stock
1 Can Coconut Milk
¼ Cup Coconut Aminos
¼ Cup Raw Honey
¼ Cup Peanut Butter
1 Tbsp Fish Sauce
1 Tsp Dried Cilantro
2 Tbsp Olive Oil
1 Cup Matchstick Carrots
1 Red Pepper - Thinly Sliced
12oz Mushrooms – Thinly Sliced
4 Cloves Garlic - Minced
1 inch Ginger - Grated
3 Shallots – Thinly Sliced
4 Tbsp Butter
Directions
Slice shallots. Melt the butter in a skillet. Caramelize shallots in melted butter for about 10 minutes. Set aside on plate.
In large stock pot, add olive oil. Turn temp to medium heat. Once oil is hot, add the carrots, peppers, and mushrooms. Cook for 5 minutes, then add garlic and ginger. Cook for 2 minutes more.
Add broth, coconut milk, coconut aminos, honey, peanut butter, fish sauce, and cilantro to pot. Bring to a boil.
Add noodles and cook until done (usually will say on package).
Serve in bowls and top with the caramelized shallots.
Optional: Add Asian crunchy noodles, crushed peanuts, and/or sliced green onions.
