Baked Zucchini


 

Ingredients

2 Large Zucchini sliced

½ Cup Unbleached All-Purpose Flour

2 Large Eggs

½ Cup Milk

2 Cups Panko Breadcrumbs

1 tsp Onion Powder

1 tsp Garlic Powder

1 tsp Smoked Paprika

1 tsp Sea Salt

¼ tsp Black Pepper

½ Cup Parmesan Cheese grated

Cooking Spray or Olive Oil


Directions

Preheat oven to 450°. Line two baking pans with parchment paper and use cooking spray to grease generously.

Place three shallow bowls on the counter. In the first, place the flour. In the second, mix the egg and milk thoroughly. In the third, mix the breadcrumbs and seasonings.

Dredge zucchini slices individually into the flour, then egg, and breadcrumbs, shaking off any excess. Place each one on the prepared baking sheets, making sure not to overlap.

Once all zucchini slices have been covered, spray with a light layer of cooking oil and sprinkle with the grated parmesan cheese.

Bake for 15 minutes or until lightly browned and crispy in preheated oven.
