Banana Bread


 

Ingredients

½ Cup Coconut Oil (or butter softened)

4 Overly Ripe Bananas mashed

2 Large Eggs

1 tsp Pure Vanilla Extract

½ Cup Coconut Sugar

1 tsp Baking Soda

1 tsp Cinnamon

1 tsp Pink Himalayan Sea Salt

2 Cups All Purpose Flour

1 Cup Dark Chocolate Chips

Optional Glaze:

½ Cup Powdered Sugar

½ tsp Pure Vanilla Extract

1 Tbsp Milk


Directions

Preheat oven to 350°.

Grease bread pan (or line muffin tin with cupcake liners).

Cream together the coconut oil and bananas. Add the eggs, vanilla and sugar and mix.

Add the flour, baking soda, cinnamon, and salt. Mix thoroughly.

Stir in the chocolate chips.

Spread into bread pan or scoop evenly into 12 count muffin tin.

Bake at 350° for approximately 1 hour or until cooked through. (25 minutes for muffins).

For glaze: whisk together the powdered sugar, vanilla and milk. Drizzle over slightly cooled loaf.

Serve warm with butter or store in an airtight container.
