Ingredients
1 lb. Ground Beef
7 Cups Beef Broth
1-14 oz Can Diced Tomatoes
1-6 oz Can Tomato Paste
6 Carrots sliced
3 Stalks Celery sliced
1 Large Onion chopped
3 Cloves Garlic minced
1 Tbsp Dried Basil
1 tsp Cane Sugar
1 ½ tsp Sea Salt
¼ tsp Black Pepper
3 Bay Leaves
4 cups fresh tortellini (or I package frozen)
Grated Parmesan Cheese for serving
Directions
In a large stock pot, sauté the carrots, celery, and onions for 10 minutes. Add beef and brown until no longer pink. Add the garlic and sauté and additional 2 minutes.
Add broth, tomatoes, tomato paste, basil, sugar, salt, pepper, and bay leaves. Simmer for 20 minutes.
Add tortellini and simmer another 5 minutes or until pasta begins to float.
Serve with a sprinkle of grated cheese.
