Ingredients
8 Slices Sourdough Bread cubed
1 ½ Cup Shredded Cheddar Cheese
2 Cup Milk (or dairy alternative)
8 Large Eggs
1 tsp Sea Salt
1 tsp Ground Mustard
1 lb. Ground Breakfast Sausage or Bacon
1 Large Onion chopped
1 large Red Pepper chopped
8 oz Mushrooms sliced
3 Cloves Garlic minced
Directions
Preheat oven to 350°. Lightly grease a 9x13 casserole dish.
Cook ground breakfast sausage or bacon, drain fat, and set aside.
In the same pan, sauté onion, red pepper, and mushroom for approximately 10 minutes. Add garlic and sauté an additional 2 minutes. Remove from heat.
In casserole dish, layer cubed bread, meat, veggies, and shredded cheese.
In a bowl, whisk together the milk, eggs, salt, and ground mustard. Pour over bread, meat, veggie and cheese in casserole dish.
Let sit for 5 minutes, pressing everything down into the egg mixture.
Bake for 45 minutes or until egg is set.
Alternatively, this can be made ahead of time. Follow all the above steps except for baking. Cover and let sit refrigerated overnight. Allow dish to come to room temperature before baking the following day.
