Ingredients
1 lb. Brussel Sprouts cleaned and halved
2 Medium Sweet Potatoes peeled and cubed
1 lb. Bacon cooked (stop cooking before it gets crispy...it will continue to cook a bit in the oven)
2 Tbsp Pure Maple Syrup
1 tsp Sea Salt
1/4 tsp Black Pepper
Olive Oil
Directions
Preheat oven to 450°
Generously coat a baking sheet with olive oil.
Place halved Brussel Sprouts cut side down on the tray.
Sprinkle the cubed sweet potatoes around the brussel sprouts.
Drizzle with a bit more of the olive oil and sprinkle with salt and pepper.
Bake for 20 minutes.
In the meantime, cut your cooked bacon into bite-sized sized pieces.
Take the tray out of the oven. Add the bacon bits, mix and turn the sprouts over. Drizzle with the maple syrup.
Put tray back in the oven for 15-20 minutes more.
The potatoes should be cooked through and the brussel sprouts should have a crispy exterior.
