Ingredients
1 lb. Chicken cooked & shredded
3 Tbsp Olive Oil
1 Medium Onion chopped
1 Cup Uncooked Rice
1 14.5 oz Can Diced Tomatoes
1 15 oz. Can Black Beans
1 tsp Garlic Powder
1 tsp Chili Powder
1 tsp Cumin
2 ½ Cup Chicken Broth
1 ½ Cup Shredded Cheddar Cheese
Directions
Heat oil in over safe pan and sauté onion until translucent.
Add uncooked rice and continue cooking for 2 minutes.
Stir in black beans, tomatoes, chicken broth, garlic powder, chili powder, and cumin.
Cover and simmer on low for 20 minutes.
Uncover and add shredded chicken, mixing until thoroughly combined.
Sprinkle cheese over top and place under broiler for 2 minutes or until cheese is lightly browned and bubbly.
Garnish with salsa, green onions, plain Greek yogurt, guacamole, shredded cabbage, or any other toppings you prefer. Serve with tortilla chips.
