Ingredients
1 Head Baby Butter Lettuce
1 lb. Cooked Chicken shredded
2 Mini Cucumbers shredded
1 Carrot shredded
1 Cup Jasmine Rice cooked
2 Tbsp Fresh Cilantro
Salt & Pepper to Taste
Peanut Sauce:
½ Cup Natural Peanut Butter
3 Tbsp Coconut Aminos
2 Tbsp Rice Vinegar
1 Tbsp Toasted Sesame Oil
1/3 Cup Hot Water
2 Tbsp Siracha
½ tsp Garlic Powder
¼ tsp Ground Ginger
Optional Toppings:
Avocado
Plain Greek Yogurt
Sesame Seeds
Crunchy Asian Noodles
Extra Cilantro
Lime wedges
Directions
Arrange lettuce leaves on a large plate.
Mix together all ingredients for peanut sauce until fully combined. Set aside.
Mix chicken, cucumbers, carrot, rice, cilantro and salt and pepper together until combined.
Divide evenly between the lettuce leaves.
Top with a drizzle of peanut sauce and desired toppings.
