Creamy Chicken Orzo


 

Ingredients

2 Tbsp Butter

1 lb. Chicken Tenderloins

1 tsp Sea Salt

¼ tsp Black Pepper

2 Tbsp Butter

1 Medium Onion chopped

3 Cloves Garlic minced

1 ½ Cups Dry Orzo

1 Cup Heavy Cream

½ Cup Parmesan Cheese grated

2 Cups Fresh Spinach

½ Cup Sun-Dried Tomatoes

1 tsp Dried Thyme


Directions

Melt butter over medium heat in a large skillet. Cook chicken tenderloins in skillet, approximately 3-5 minutes per side, seasoning each side with salt and pepper.

Remove chicken from skillet and let cool slightly. Once cooled, shred and set aside.

In the same skillet, add 2 more tablespoons butter and melt. Add the chopped onion and sauté until translucent. Add the orzo and cook until lightly browned. Add the minced garlic and cook one minute more. Add 1 ½ cups water and simmer until orzo is tender, about 5 minutes.

Add the cream, spinach, parmesan, tomatoes, and thyme. Stir through.

Add the chicken and any juices back to the pan and stir through.

Serve topped with a little extra shredded parmesan cheese and fresh thyme (optional).
