Ingredients
4 Cod Filets
½ Cup Unbleached All-Purpose Flour
1 Egg
¼ Cup Milk
2 Cups Panko Breadcrumbs
3 Tbsp Olive Oil
½ Cup Avocado Mayo
¼ Cup Relish
4 Slices Cheddar Cheese
Lettuce Leaves
Tomato sliced
Onion sliced
Pickles
4 Sandwich Rolls (Ciabatta is a great option)
Optional Toppings:
Plain Greek Yogurt, Sliced Avocado, Shredded Purple Cabbage, Sliced Radishes, Pickled Red Onions, Fresh Cilantro, Lime Wedges, and Hot Sauce
Directions
Place flour in a shallow bowl. Mix egg and milk in another shallow bowl. Place breadcrumbs in a shallow bowl as well. (Feel free to season with sea salt, pepper, paprika, or any other seasonings of choice).
Dredge each filet in the flour first, then the egg mixture, and lastly the breadcrumbs. Shake off any excess. Set aside on a plate.
Heat oil in large skillet over medium-high heat. Add the filets, making sure not to crowd the pan. Work in batches if necessary.
While the fish is cooking, mix the mayo and relish to make the sauce. Set aside.
Toast the rolls and then spread the sauce on the inside of each roll.
Place a filet on each roll and top with cheese, lettuce, tomato, onion, and pickles. (Avocado slices are also a great option).
Try with a side of homemade french fries.
