Janelle’s Breakfast Burrito Bowl


 

Ingredients

½ cup Pinto Beans

4oz Chicken/Turkey/Lean Beef pre-cooked

½ cup Chopped Veggies

½ cup Jasmine Rice cooked

1-2 Eggs

Salt and pepper to taste

Optional:

Red or Green Chile

Fresh tomatoes diced

Sourdough


Directions

Place veggies in a small fry pan. Cook until crisp tender.

Add beans, meat, and rice. Mix and heat through.

Add salt and pepper to taste.

Spoon mixture into bowl.

In the same pan, add the two eggs and cook over easy leaving the yolk slightly runny.

Place eggs on top of meat mixture. Top with chile and enjoy with a slice of toasted sourdough.
