1 lb. Roast Beef thinly sliced
6 Slices Swiss Cheese
12 Slices Rye Bread (or Sourdough)
½ Cup Avocado Mayo
½ Cup Ketchup
¼ Cup Relish
1 Cup Sauerkraut drained
1 Stick Butter softened
Pickles
Directions
Mix mayo, ketchup, and relish thoroughly. Set aside.
Preheat large griddle to 400°.
In the meantime, spread softened butter on one side of each slice of bread. On the inside of each slice, spread the sauce mixture.
Then, layer one slice of swiss cheese, evenly distributed roast beef, and sauerkraut onto the sauced slice of bread. Top with another sliced of bread, buttered sides out.
Place each sandwich on the griddle and grill until lightly browned and crunchy. Cheese should be melted in the middle.
Serve with pickles.
