Ingredients
2 Zucchini shredded
2 Sweet Potatoes grated
1 Medium Onion thinly sliced
5 Large Eggs whisked
1 ½ Cups Cheddar Cheese shredded
¾ Cup Unbleached All-Purpose Flour
1 tsp Baking Powder
1 tsp Sea Salt
¼ tsp Black Pepper
1 Tbsp Butter
4 Large Eggs
Pure Maple Syrup for serving
Directions
Place zucchini, sweet potato, onion, eggs, cheese, flour, baking powder, salt, and pepper in a large bowl. Mix thoroughly to combine.
Preheat a griddle 400° (or a large fry pan over medium-high heat).
Grease the griddle with cooking spray. Drop batter onto the griddle with a 1/3 cup scoop. Press down slightly to form a pancake shape.
Cook for approximately 4 minutes per side, or until lightly browned. Repeat with remaining batter.
In the meantime, heat 1 tablespoon butter in a skillet over medium -high heat. Fry eggs to desired doneness. (We prefer a slightly runny yolk).
Serve plated pancakes, topped with fried eggs and a drizzle of pure maple syrup.
